I came to visit my parents while in Finland and since it is the hunting season, my mom wanted to prepare some wild duck (Mallard) for dinner.
As usual, I ended up preparing the dinner together with my mom and dad. Me coming up with some new ideas, mom doing the preparations and dad perfecting the dish.
This is what we came up with… Wild Duck in Three ways – duck confit, duck breast and duck mousse, served with Finnish Lapland puikula (almond potato) puree, roasted vegetables, cognac glace and wild lingonberry jam.
As a side note I have to mention that all the main ingredients, the duck, potatoes, vegetables and lingonberries, were gathered within two miles around the house. The duck was caught by my father from the near by lake, all the vegetables were grown in my moms garden and the lingonberries were picked from the near by forest.
