Without actually knowing it, I have been on a Paleo diet most of my adult life. It has been less than a year, since I first heard about the whole thing. The Paleo philosophy has simply come very natural to me. One of the non-Paleo things in my diet, however, has been grains. As a Finnish person, bread and especially rye bread, has always been integral part of my diet.
After encountering some health issues I started to educate myself more about food and nutrition and I discovered that some of my health issues might be caused by grains. About two months ago I then decided to exclude grains from my diet. And now I have started to have cravings for an occasional piece of warm home baked loaf, which I used to make myself every now and then. Thus, it was time to experiment making of non-grain Paleo bread.
I went to the local natural foods store and got some Almond meal and Coconut flour, and this is what I came up with.
My First Paleo Bread
1/4 cup Almond meal
1/5 cup Coconut flour
1/3 cup Roasted, ground Flaxseeds
1/5 cup Potato flour
5 Eggs (pasture raised)
1 tsp Baking soda
1 tsp Himalayan sea salt
1 tsp Apple Cider Vinegar
1/4 cup Water
Extra Virgin Olive Oil
Preheat the oven to 350°F (175°C)
1) Mix dry ingredients
2) Beat eggs until fluffy
3) Mix Apple Cider Vinegar and water and add to the eggs
4) Mix dry ingredients with eggs (use a strainer to add the dry ingredients, so that your batter remains as fluffy as possible. The batter should not be too liquid, nor too hard)
5) Pour into a baking pan and brush with extra virgin olive oil
6) Bake at 350°F (175°C) for 20 min
I was really surprised how fluffy the loaf turned out and how incredibly bread-like taste I achieved.
